Ingredients

  • 12 oz bag of brussel sprouts cut in half
  • 3 apples chopped
  • 16 oz can chickpeas
  • 4 tbsp olive oil
  • 4 tbsp balsamic glaze + more fore topping

Instructions

  • Prepare your brussel sprouts by cutting off the stems and splitting in half; add to a glass baking dish or pie plate. Chop the apples and add them in with the brussel sprouts. Pour in the chickpeas.
  • Drizzle the olive oil and balsamic glaze over the brussel sprouts, apples, and chickpeas and mix until everything is coated.
  • Bake the mixture at 400°F for about 20 minutes to allow the brussel sprouts and apples to cook through. Take the baking dish out of the oven and stir the mixture; change the oven setting to 400°F on roast and cook for another 20 minutes, or until the top layer has become crispy.
  • Serve as a side or main dish and enjoy!
