Add the pitted date and coconut oil to a small bowl or ramekin, microwave for 30-40 seconds or until the coconut oil melts. Use a fork to mash up the date and incorporate with the coconut oil. Add in the ground flax and extracts and mix to combine.
Pour in the rest of the ingredients: almond flour, ap flour, baking powder, and oat milk. Mix until all of the ingredients are incorporated, making sure to scrape down the sides of the bowl.
Transfer the dough to a baking sheet with parchment paper. Flatten the dough with the fork or press with the parchment paper. Bake at 350° for about 10 minutes or until the edge of the cookie begins to turn golden brown. Enjoy!
