Ingredients

  • 1 pitted medjool date
  • ½ tbsp coconut oil
  • ½ tsp vanilla extract
  • ¼ tsp almond extract optional
  • 1 tbsp ground flax
  • 1 tbsp almond flour
  • 2 tbsp all purpose flour
  • pinch of baking powder
  • 1 tbsp oat milk or milk of your choice

Instructions

  • Add the pitted date and coconut oil to a small bowl or ramekin, microwave for 30-40 seconds or until the coconut oil melts. Use a fork to mash up the date and incorporate with the coconut oil. Add in the ground flax and extracts and mix to combine.
  • Pour in the rest of the ingredients: almond flour, ap flour, baking powder, and oat milk. Mix until all of the ingredients are incorporated, making sure to scrape down the sides of the bowl.
  • Transfer the dough to a baking sheet with parchment paper. Flatten the dough with the fork or press with the parchment paper. Bake at 350° for about 10 minutes or until the edge of the cookie begins to turn golden brown. Enjoy!
