Crispy Sweet Dijon Brussel Sprouts

Ingredients

  • 2 lb bag of brussel sprouts
  • 3-4 pitted medjool dates
  • 3 tbsp dijon mustard
  • 4-5 tbsp olive oil
  • salt + pepper to taste

Instructions

  • Prepare the brussel sprouts by thoroughly rinsing and cutting off any stems or leaves with dirt. Cut them in half and place on a baking tray with parchment paper or aluminum foil.
  • Make the Sweet Dijon Glaze. Blend the pitted dates, dijon mustard, olive oil, and spices in a food processor until it has reached the consistency of a sauce. Spread the sauce evenly on the tops of the cut open brussel sprouts.
  • Bake at 400°F for about 20 minutes. If your oven has a roast setting, bake the brussel sprouts for an additional 20 minutes at 400°F Roast. If your oven doesn't have a roast function, bake for an additional 20 minutes at 425°F.
  • Allow them to cool, serve and enjoy!
