This Sourdough Discard Granola with Chopped Dates makes a healthy breakfast or snack and only requires a few staple ingredients! It adds a little sweetness to your day without any refined or added sugars!
I love granola and homemade is always the way to go for me! This recipe is delicious as cereal with milk, on top of a yogurt bowl with some fruit , or on its own as a snack. The chopped dates add sweetness to the recipe without any other added sugars!
In addition to all the other healthy ingredients in this recipe, this granola uses ½ cup of sourdough discard which can add a bunch of health properties that may improve digestion and gut health! It’s also a great way to use up any sourdough discard that you may have on hand.
The texture is crunchy and from the two kinds of oats and chopped walnuts. The chopped dates make clusters of granola which make a delicious snack!

Ingredients
- Oats: I used a mix of 1 cup rolled oats and 1 cup quick oats to develop the texture, but you can use 2 cups of whatever oats you have on hand. They provide nutrients such as fiber and healthy carbohydrates.
- Flax Seed Meal: a great source of dietary fiber and healthy fats. You can substitute chia seeds.
- Chopped walnuts: these provide healthy fats, protein, fiber, and omega-3s among many other health benefits. They give a crunchy element and more flavor to the granola. You could substitute another type of nut such as almonds or pecans.
- Coconut Oil: provides healthy fats and moisture to the granola.
- Sourdough Discard: this is made from an active sourdough starter that has already deflated. Sourdough is known to provide many health benefits such as pre and probiotics, improved gut health, and helping digestion. You can substitute active starter or ½ cup flour mixed with ¼ cup water in this recipe.
- Medjool Dates: I used about 5 chopped dates, but feel free to use as many as you like! They give flavor and natural sweetness to the recipe. It provides fiber, antioxidants, natural sugars, and carbohydrates making them a delicious and nutritious component of this recipe. You can substitute raisins for a similar taste and texture.
- Oat Milk: provides moisture to the granola. Substitute any milk of your choice.

How To Make: Step by Step
Add the dry ingredients: rolled oats, quick oats, flax seed, and walnuts to a bowl. Mix to combine.
Pour in the rest of the ingredients: coconut oil, sourdough discard, chopped dates, and oatmilk. Mix until all of the ingredients are incorporated and the chopped dates are distributed throughout the mixture.
Spread the granola mixture on a baking sheet with parchment paper. Bake at 350° for about 15 minutes or until the granola begins to turn golden brown. If you like crunchier granola, mix the granola and bake for an additional 5 minutes. Enjoy!
Serving and Storage
Once the granola has cooled completely, store in a glass jar or container until ready to eat.
