A single serve “sugar” cookie that is sweetened only by 1 medjool date! Great for a sweetness craving without any refined sugars!
Sometimes I’m really in the mood for a certain type of cookie, but don’t have any on hand and don’t want to make a whole big batch. That’s where single serve cookies come in! They can be made in a pinch and just hit the spot when you really want it.
This recipe uses a few clean ingredients to make a healthier version of a sugar cookie. It’s vegan, can be made gluten free, and is refined sugar free as all the sweetness comes from 1 medjool date!
The texture is soft, similar to a traditional sugar cookie. The combination of the ingredients create a delicious flavor combination, which is enhanced by the vanilla and almond extracts. It all comes together in a delicious, slightly nutty, naturally sweetened cookie 🙂

Ingredients
- Medjool Date: gives flavor and natural sweetness to the recipe. It provide fiber, antioxidants, natural sugars, and carbohydrates making them a delicious and nutritious component of this recipe
- Coconut Oil: provides healthy fats and moisture to the cookie.
- Extracts: I used both vanilla and almond which provides additional vanilla flavor to the recipe and enhances the other flavors. The almond extract is optional but really helps create a strong nutty flavor which balances nicely with the sweetness of the medjool date.
- Flax Seed Meal: a great source of dietary fiber and healthy fats. This also helps to hold the cookie together. You can substitute chia seeds.
- Almond Flour: this helps build the structure and gives the cookie a softer texture. It also adds protein and healthy fats.
- All Purpose Flour: this provides carbohydrates and helps create a soft texture for the cookie. Use organic or non-GMO if possible. Substitute gluten free flour if necessary.
- Baking Powder: helps develop the texture of the cookie.
- Oat Milk: provides moisture to the cookie. Substitute any milk of your choice.

- Fork for mixin
- Baking sheet with parchment paper
- Oven/toaster oven
How To Make: Step by Step
Add the pitted date and coconut oil to a small bowl or ramekin, microwave for 30-40 seconds or until the coconut oil melts. Use a fork to mash up the date and incorporate with the coconut oil. This should be a thick and sticky texture.
Add in the ground flax and extracts and mix to combine.
Pour in the rest of the ingredients: almond flour, ap flour, baking powder, and oat milk. Mix until all of the ingredients are incorporated, making sure to scrape down the sides of the bowl.
Transfer the dough to a baking sheet with parchment paper. Flatten the dough with the fork or press with the parchment paper. Bake at 350° for about 10 minutes or until the edge of the cookie begins to turn golden brown. Enjoy!
Serving and Storage
Once the cookie has finished baking, allow it to cool for about 5-10 minutes and enjoy!
If you make multiple cookies in advance, you can store any leftover cookies in an airtight container or zip lock bag.
