Ingredients
- 1 cup rolled or quick oats
- 1/2 cup almond flour
- 1/4 cup flax seed
- 2 tbsp chia seed
- 1/2 cup almond butter
- 1/3 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup pomegranate seeds
Instructions
- Mix together your dry ingredients in a large bowl. Make sure everything is evenly distributed and any clumps of almond flour have been broken up.
- Add in the wet ingredients and mix until everything is well combined. This should be a thick, cookie dough-like texture. Pour in the pomegranate seeds and fold into the mixture.
- Take about a 1 tbsp spoonful of the mixture in your hands and roll into a ball. Place in an airtight container with a lid and refrigerate for at least 1 hour. Enjoy!
