I love brussel sprouts… especially when they are crispy and made with this Sweet Dijon Glaze!
Brussel sprouts are packed with nutrients making them a great addition to any dinner. This recipe is a way to prepare them that is both nutritious and delicious! This is my favorite way to make brussel sprouts!
They are coated in a homemade glaze that is made with pitted medjool dates, dijon mustard, and olive oil. This creates a sweet and tangy flavor combination that deliciously coats the brussel sprouts!
After the brussel sprouts are cooked they are soft and still slightly crunchy. Baking them on the roast function creates a crispy outer edge!

Ingredients & Substitutions
- Brussel Sprouts: the star of this recipe! They are gut and heart healthy, provide antioxidants, and many other health benefits.
- Pitted Medjool Dates: used to provide natural sweetness to the glaze and give a unique taste. They provide fiber, antioxidants, natural sugars, and carbohydrates making them a delicious and nutritious component of this recipe.
- Dijon Mustard: this provides a tang to the recipe. It produces a unique flavor when combined with the sweetness of the dates. Dijon provides antioxidants, digestive enzymes and other health benefits.
- Olive Oil: you could use regular olive oil or extra virgin, but extra virgin will give it a more intense flavor. This provides healthy fats among many other health benefits and helps make the brussel sprouts crispy.
- Spices: salt and pepper to taste. You could also add garlic and/or onion powder for extra flavor.

- Baking sheets with aluminum foil or parchment paper

How to make: step-by-step
Prepare your brussel sprouts. Thoroughly rinse with water and cut off any stems or leaves that may have dirt.
Cut the brussel sprouts in half and place them on a baking sheet with aluminum foil or parchment paper, open side up.
Make the sweet dijon glaze: add the pitted medjool dates, dijon mustard, olive oil, and spices to a food processor or blender. Blend until you have reached the consistency of a sauce (you may have to stop and scrape down the sides of the blender a few times to make sure everything gets incorporated). If it is having trouble blending, you can add an extra 1 tbsp of olive oil or water.
Using the pastry brush, evenly spread the sweet dijon sauce over the tops of the brussel sprouts. Bake at 400°F for about 20 minutes. If your oven has a roast setting, bake the brussel sprouts for an additional 20 minutes at 400°F Roast. If your oven doesn’t have a roast function, bake for an additional 20 minutes at 425°F.
Allow them to cool, serve and enjoy!
Serving and Storage
Serve as an appetizer or side dish with any meal. This pairs well with chicken, burgers, other kinds of meat, with other roasted vegetables, and roasted potatoes!
Any leftover brussel sprouts can be stored in a glass container with a covering or wrapped in aluminum foil. Keep in the refrigerator for 1-2 days.

Crispy Sweet Dijon Brussel Sprouts
Ingredients
- 2 lb bag of brussel sprouts
- 3-4 pitted medjool dates
- 3 tbsp dijon mustard
- 4-5 tbsp olive oil
- salt + pepper to taste
Instructions
- Prepare the brussel sprouts by thoroughly rinsing and cutting off any stems or leaves with dirt. Cut them in half and place on a baking tray with parchment paper or aluminum foil.
- Make the Sweet Dijon Glaze. Blend the pitted dates, dijon mustard, olive oil, and spices in a food processor until it has reached the consistency of a sauce. Spread the sauce evenly on the tops of the cut open brussel sprouts.
- Bake at 400°F for about 20 minutes. If your oven has a roast setting, bake the brussel sprouts for an additional 20 minutes at 400°F Roast. If your oven doesn't have a roast function, bake for an additional 20 minutes at 425°F.
- Allow them to cool, serve and enjoy!
