This Balsamic Roasted Brussel & Apple Sprout Hash is full of flavor and natural sweetness to create a delicious side or main dish. It’s completely plant based and only requires 5 ingredients!
This recipe combines some of my favorite plant-based ingredients to make a delicious hash! The two main components of this recipe: brussel sprouts and apples provide great substance and a unique balance of flavors.
Brussel Sprouts provide a hearty crunch and become crispy when roasted. The apples provide a natural sweetness to this recipe and bring a soft element to the mixture. Adding in the chickpeas provides a great source of plant-based protein which becomes very flavorful after roasting with the other ingredients.
This is a great recipe to make when you need a plant-based side or main dish as it provides protein and healthy carbohydrates. Pair it with another side for a complete meal!
This dish is vegan, gluten-free, dairy-free, and refined sugar free (just make sure to check the ingredients in your balsamic glaze)!

Ingredients & Substitutions
- Brussel Sprouts: a main component of this recipe! They are gut and heart healthy, provide antioxidants, and many other health benefits.
- Apples: I used 3 organic fuji apples that were a little on the softer side. This is a great way to use up some apples that need to be eaten. They provide a sweetness to the recipe that pairs well with the sweetness from the balsamic glaze. Health wise they are a great source of fiber and vitamins.
- Chickpeas: roasting the chickpeas in olive oil and seasonings make them crunchy and toasty. This helps provide protein, fiber, healthy fats among many other benefits.
- Olive Oil: you could use regular olive oil or extra virgin, but extra virgin will give it a more intense flavor. This provides healthy fats among many other health benefits and helps make the brussel sprouts crispy.
- Balsamic Glaze: I used dark balsamic vinegar but you could use whatever balsamic vinegar, dressing or glaze you have on hand. You may just have to adjust the amounts to your liking.

How to make: step-by-step
Prepare your brussel sprouts by cutting off the stems and any darker leaves. Cut them in half, rinse, and add to a glass baking dish or pie plate.
Chop the apples into small pieces and add them in with the brussel sprouts. Rinse the chickpeas and pour them into the mixture.
Drizzle the olive oil and balsamic glaze over the brussel sprouts, apples, and chickpeas and mix until everything is coated.
Bake the mixture at 400°F for about 20 minutes to allow the brussel sprouts and apples to cook through.
Take the baking dish out of the oven and stir the mixture; change the oven setting to 400°F on roast and cook for another 20 minutes, or until the top layer has become crispy. If you would like more of the mixture to get crispy, mix and roast again for an additional 10 minutes.
Serving and Storage
Serve as a side or main dish for lunch or dinner, you should get about 6-8 servings. This pairs well with a cold pasta salad, fresh bread, or some grilled chicken.
Any leftover hash can be stored in the glass baking dish with a coving or in another container with a cover. Keep in the refrigerator for 1-2 days.

Ingredients
- 12 oz bag of brussel sprouts cut in half
- 3 apples chopped
- 16 oz can chickpeas
- 4 tbsp olive oil
- 4 tbsp balsamic glaze + more fore topping
Instructions
- Prepare your brussel sprouts by cutting off the stems and splitting in half; add to a glass baking dish or pie plate. Chop the apples and add them in with the brussel sprouts. Pour in the chickpeas.
- Drizzle the olive oil and balsamic glaze over the brussel sprouts, apples, and chickpeas and mix until everything is coated.
- Bake the mixture at 400°F for about 20 minutes to allow the brussel sprouts and apples to cook through. Take the baking dish out of the oven and stir the mixture; change the oven setting to 400°F on roast and cook for another 20 minutes, or until the top layer has become crispy.
- Serve as a side or main dish and enjoy!
